Pasta da Maddalena

FROM THE CHEF'S TABLE TO YOUR TABLE...

As a chef, an artist, and a father, everything I work for revolves around my family, the friendships I have created along my journeys, and the food that connects us and nurtures our bodies and our souls.  Good cuisine requires patience and love, and growing up on a farm, I have always had a great appreciation for the ingredients used to create a delicious meal.  Those same ingredients go into every pasta and sauce we make, so you can relax and enjoy sharing a meal at your table.

The Story Behind The  Pasta

Chef David has always loved taking pasta to the next level with different flavor combinations.

In December of 2019, we acquired our pasta extruder and he was finally able to start experimenting with recipes. While Chef David and his creative partner’s original concept was to focus solely on using mushrooms, Chef David’s culinary imagination quickly saw the infinite possibilities

We aren’t going to give away all our secrets and ingredients, as most will become future pasta blends. However, our staff can say that we’ve tried some amazing combinations and have been stunned by the outcomes.

Taking advantage of the "slow season" in spring of 2020, our Culinary Brigade turned into a Carpenter Brigade and expanded our kitchen to create our own pasta factory.

Our first pasta launched in June of 2020, Casarecce Dieci. We built handmade crates that we then torched, stained, and then filled with pasta, sauce, and wine!

Since then, our pasta line has flourished!

We are now located in several retail locations including Bavette, Beans & Barley, Clock Shadow Creamery, Rushing Waters, Pop's Market, and online for delivery at Farmer's Market United.

For MPM's Moveable Feast Online in May 2020, Chef David gave his first sneak peek of the Casarecce Dieci along with a cooking demo, check it out:
